Removing a Servant from the Hot Springs before fully recovered will keep their recovery progress, but recovery rate will revert to normal speed.Placing a Servant in the Hot Springs will relieve Exhaustion at 2x speed (can cut recovery time from 4 hours to 2 hours).Upon clearing "Discovery: Secret Hot Springs of Solace" (which appears after clearing Floor 1), the Hot Springs are unlocked.This starts after quest completion, and does not occur if retreating or failing to clear a quest. Keep in mind at least 3 Servants must be fielded per quest (full front line). For this reason it is better to field fewer than 6 Servants for easier quests-and field the least number of Servants that can still comfortably clear a floor. Servants will gain "Exhaustion" after clearing a tower quest (including the back line!), during which a Servant cannot participate in a quest again while they have Exhaustion.
